A quick and easy protein-packed overnight oats recipe featuring chia seeds and peanut butter for a creamy, nutritious breakfast that requires no cooking.

Ingredients

Scale
  • ½ cup (45g) rolled oats (old-fashioned)
  • 1 tablespoon (15g) chia seeds
  • 2 tablespoons (32g) natural peanut butter (smooth, unsweetened)
  • ¾ cup (180ml) milk of choice (dairy or plant-based)
  • ¼ cup (60g) Greek yogurt (optional)
  • 1 teaspoon (5ml) maple syrup or honey
  • ½ teaspoon (2ml) vanilla extract
  • Pinch of salt

Instructions

  1. Combine the dry ingredients: In your jar or mixing bowl, add ½ cup (45g) rolled oats, 1 tablespoon (15g) chia seeds, and a pinch of salt. Stir to mix evenly.
  2. Mix the wet ingredients: In a small bowl, whisk together 2 tablespoons (32g) natural peanut butter, ¾ cup (180ml) milk of your choice, ¼ cup (60g) Greek yogurt if using, 1 teaspoon (5ml) maple syrup or honey, and ½ teaspoon (2ml) vanilla extract until smooth.
  3. Pour the wet mixture over the oats and chia seeds. Stir thoroughly to combine, ensuring no peanut butter clumps remain.
  4. Seal the jar or cover the bowl tightly and refrigerate for at least 6 hours or overnight.
  5. In the morning, stir the oats well. If too thick, add a splash of milk to loosen. Top with fresh fruit, nuts, or extra peanut butter as desired.

Notes

Use old-fashioned rolled oats for best texture. Blend peanut butter with milk first to avoid clumps. Adjust sweetness after chilling if needed. Overnight refrigeration is essential for creamy texture. Can be stored up to 3 days refrigerated. For vegan option, use plant-based milk and dairy-free yogurt. Variations include swapping peanut butter for other nut butters or adding fruits and nuts as toppings.
