  • ¾ cup (150 g) granulated sugar
  • 2 large eggs, room temperature
  • ½ cup (120 g) sour cream or Greek yogurt (use dairy-free yogurt if needed)
  • 1 teaspoon vanilla extract
  • ½ cup (60 g) chopped walnuts, toasted
  • ¼ cup (50 g) packed brown sugar
  • ½ teaspoon ground cinnamon
  • 3 tablespoons (45 g) unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray and set aside.
  2. Prepare the streusel topping: In a small bowl, combine ½ cup chopped walnuts, ¼ cup brown sugar, and ½ teaspoon ground cinnamon. Add 3 tablespoons cold, cubed butter.
  3. Mix the streusel using your fingers or a fork until pea-sized clumps form. Set aside in the fridge to keep cold while making the batter.
  4. In a large bowl, mash 3-4 ripe bananas with a fork or potato masher until mostly smooth but with some texture left.
  5. Whisk in 2 large eggs, ½ cup sour cream (or Greek yogurt), ½ cup melted and cooled unsalted butter, and 1 teaspoon vanilla extract until smooth and combined.
  6. In a separate bowl, sift together 2 cups all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt.
  7. Gently fold the dry ingredients into the banana mixture using a spatula until just combined, being careful not to overmix.
  8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  9. Evenly sprinkle the walnut streusel mixture over the batter.
  10. Bake for 55-65 minutes, starting to check at 55 minutes by inserting a toothpick into the center; it should come out with a few moist crumbs but no wet batter.
  11. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter to keep the bread tender. Keep the butter cold in the streusel topping to create crunchy clusters. Toast walnuts for deeper flavor but it’s optional. Tent with foil if streusel browns too fast. Use sour cream or Greek yogurt for extra moisture and tang. Check doneness with a toothpick to avoid underbaking.
