Instructions

  1. Line a 9-inch round cake pan with parchment paper, leaving some overhang on the sides for easy removal.
  2. In a large bowl, beat together peanut butter and softened unsalted butter until smooth and creamy (about 2-3 minutes).
  3. Add vanilla extract and salt, then gradually sift in powdered sugar. Stir or beat until thick and holds shape; add more powdered sugar if too soft.
  4. Set up a double boiler by simmering water in a saucepan and placing a heatproof bowl on top without touching the water.
  5. Add semi-sweet chocolate chips and coconut oil to the bowl. Stir gently and continuously until chocolate is fully melted and smooth. Remove from heat.
  6. Pour about half of the melted chocolate into the lined pan. Spread evenly along the bottom and slightly up the sides to create a chocolate shell.
  7. Place the pan in the fridge for 10-15 minutes until the chocolate firms but is not completely hard.
  8. Remove the pan from the fridge and spoon the peanut butter mixture into the center. Spread evenly over the chocolate base, pressing gently to remove air pockets.
  9. Pour the remaining melted chocolate over the peanut butter layer, spreading carefully to fully cover and seal the edges.
  10. Place the pan back in the fridge for at least 1 hour or until fully set and firm to the touch.
  11. Use the parchment paper overhang to lift the giant peanut butter cup out of the pan. Slice into wedges with a sharp knife warmed under hot water for cleaner cuts.
