Ingredients

Scale
  • 1 cup (227g) unsalted butter, browned
  • 3/4 cup (150g) granulated sugar
  • 1/2 cup (110g) brown sugar, light or dark
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon fine sea salt
  • 1 1/2 cups (270g) semi-sweet chocolate chips

Instructions

  1. Brown the butter: Place 1 cup (227g) unsalted butter in a heavy-bottomed saucepan over medium heat. Stir frequently as it melts and foams. Cook until golden brown with a nutty aroma, about 7-10 minutes. Remove from heat and pour into a heatproof bowl to cool slightly, scraping browned bits from the pan.
  2. Mix sugars and brown butter: Add 3/4 cup granulated sugar and 1/2 cup brown sugar to the cooled butter. Stir until well combined and shiny, about 5 minutes.
  3. Add eggs and vanilla: Beat in 2 large eggs, one at a time, followed by 1 teaspoon vanilla extract until smooth and glossy, about 3 minutes.
  4. Combine dry ingredients: In a separate bowl, whisk together 2 1/4 cups all-purpose flour, 1 teaspoon baking soda, and 1 teaspoon fine sea salt, about 2 minutes.
  5. Fold dry into wet: Gradually add dry ingredients into wet mixture, folding gently with a spatula just until combined, about 3-4 minutes. Avoid overmixing.
  6. Stir in chocolate chips: Gently fold in 1 1/2 cups semi-sweet chocolate chips until evenly distributed, about 2 minutes.
  7. Chill the dough: Cover bowl with plastic wrap and refrigerate for at least 30 minutes to firm up dough and enhance flavor.
  8. Preheat oven and prepare baking sheet: Heat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats, about 10 minutes.
  9. Portion and bake: Scoop dough using a cookie scoop or tablespoon, spacing about 2 inches apart. Bake for 12-15 minutes until edges are golden and centers slightly soft.
  10. Cool completely: Transfer cookies to wire racks and cool for about 15 minutes before serving.

Notes

Watch the butter closely when browning to avoid burning. Chill dough at least 30 minutes to prevent spreading and develop flavor. Use quality chocolate chips for best melt and flavor. Avoid overmixing once flour is added to keep cookies tender. Rotate baking sheets halfway through baking for even cooking.
