  • 1/2 cup low sodium soy sauce
  • 1/2 cup beef broth
  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated (optional)
  • 1 teaspoon sesame oil
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Pinch of red pepper flakes (optional)
  • Sliced green onions for garnish
  • Cooked white or brown rice to serve

Instructions

  1. Trim excess fat from the chuck roast and slice thinly against the grain into strips about 1/4-inch thick.
  2. In a medium bowl, whisk together soy sauce, beef broth, brown sugar, minced garlic, grated ginger (if using), sesame oil, and red pepper flakes.
  3. Place the sliced beef in the slow cooker and pour the sauce over it. Stir gently to coat the beef evenly.
  4. Cover and cook on low for 6 to 8 hours until the beef is tender and shreds easily. Alternatively, cook on high for 4 hours for a quicker option.
  5. About 20 minutes before the end of cooking, add the broccoli florets to the slow cooker. Stir gently, cover, and let the broccoli steam until bright green and crisp-tender.
  6. Mix cornstarch with water to create a slurry. Stir the slurry into the slow cooker and cook uncovered for an additional 10-15 minutes to thicken the sauce.
  7. Garnish with sliced green onions and serve over freshly cooked rice.

Notes

Use chuck roast for best tenderness; slice thinly against the grain. Add broccoli in the last 20 minutes to keep it crisp. Use cornstarch slurry at the end to thicken sauce and avoid lumps. For gluten-free, substitute tamari or coconut aminos for soy sauce and arrowroot powder for cornstarch. If using Instant Pot, brown beef first, cook on high pressure for 35 minutes, then steam broccoli for 5 minutes.
