  • 4 to 5 garlic cloves, minced
  • 3 tablespoons unsalted butter
  • 1 cup (240 ml) low sodium chicken broth
  • 2 tablespoons fresh mixed thyme, rosemary, and parsley, chopped
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 1/2 teaspoon onion powder (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and onion powder if using.
  2. In a small bowl, combine minced garlic, chopped fresh herbs, and softened butter. Mix well to create a garlic herb butter blend.
  3. Place the seasoned chicken breasts in a single layer at the bottom of the crockpot.
  4. Spread the garlic herb butter mixture evenly over the top of each chicken breast.
  5. Pour the chicken broth gently around the chicken, avoiding washing off the herb butter.
  6. Cover and cook on low for 3 to 4 hours, checking for doneness after 3 hours. The internal temperature should reach 165°F (74°C).
  7. About 20 minutes before serving, carefully remove the chicken breasts and cover loosely with foil to keep warm.
  8. Stir the juices in the crockpot, sprinkle the flour over the liquid, and whisk briskly to avoid lumps.
  9. Replace the lid and let the gravy thicken for 15 to 20 minutes on low heat.
  10. Taste and adjust seasoning with salt and pepper.
  11. Plate the chicken breasts and spoon the garlic herb gravy generously over the top.

Do not skip the broth to keep chicken moist. Cook on low heat to avoid drying out. Use fresh herbs for best flavor or half the amount if using dried. Avoid overcooking by checking at 3 hours. Whisk flour gradually to prevent lumps in gravy. Rest chicken under foil after cooking to redistribute juices. Optional searing before slow cooking adds flavor but is not necessary.
