  • 34 pounds chuck roast (1.41.8 kg), well-marbled
  • 1 packet ranch dressing mix (about 1 ounce / 28 grams)
  • 1 packet au jus gravy mix (about 1 ounce / 28 grams)
  • 4 tablespoons unsalted butter, softened (60 grams)
  • 1 jar pepperoncini peppers with juice (about 78 peppers)
  • 34 garlic cloves, minced
  • Freshly ground black pepper, to taste
  • Optional: 1 tablespoon Worcestershire sauce (15 ml)

Instructions

  1. Pat the chuck roast dry with paper towels and trim excess fat if desired, leaving some for flavor. Season all sides generously with freshly ground black pepper.
  2. Optional: Heat 1 tablespoon oil in a skillet over medium-high heat and brown the roast on all sides until golden crust forms, about 10 minutes.
  3. Place the roast in the crockpot insert.
  4. Sprinkle ranch dressing mix and au jus gravy mix evenly over the roast.
  5. Place softened butter on top of the roast and scatter minced garlic around and on top.
  6. Pour the entire jar of pepperoncini peppers with juice over the roast.
  7. Optional: Drizzle Worcestershire sauce over everything.
  8. Cover and cook on low for 7-8 hours without lifting the lid.
  9. After 7 hours, check tenderness with a fork; if it does not shred easily, cook an additional 30-60 minutes.
  10. Remove roast carefully with tongs, shred with forks, and spoon the au jus over the top before serving.

Notes

Do not lift the crockpot lid during cooking to retain heat. Save some pepperoncini juice to adjust sauce tanginess. If au jus is too thick, thin with beef broth or water. For thicker sauce, use a cornstarch slurry. Browning the roast is optional but adds flavor. Fresh garlic is preferred over jarred. Use low-sodium seasoning mixes to control salt levels. Can be adapted for Instant Pot or made dairy-free by substituting butter with olive oil or vegan margarine.
