  • 2 tablespoons fresh thyme, finely chopped (stems removed)
  • 2 tablespoons honey (raw or mild-flavored)
  • 1 tablespoon olive oil
  • ½ teaspoon salt (sea salt or kosher salt preferred)
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon freshly squeezed lemon juice (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and allow it to heat for 10 minutes.
  2. Peel and cut 1 pound of carrots into 2-inch sticks, keeping them roughly the same size for even roasting.
  3. In a medium mixing bowl, toss the carrots with 1 tablespoon olive oil, ½ teaspoon salt, and ¼ teaspoon freshly ground black pepper until evenly coated.
  4. Spread the carrots in a single layer on a rimmed baking sheet, ensuring they have space to roast evenly.
  5. Roast the carrots for 15 minutes, stirring or flipping halfway through to promote even browning.
  6. While roasting, melt 3 tablespoons softened unsalted butter with 2 tablespoons honey and 2 tablespoons finely chopped fresh thyme in a small saucepan over low heat. Stir gently until combined and fragrant, about 3 minutes. Do not boil or brown.
  7. Remove the carrots from the oven and toss them with the thyme butter glaze. Return to the baking sheet and roast for another 5-7 minutes, basting occasionally with the glaze.
  8. Optional: Just before serving, drizzle 1 teaspoon of freshly squeezed lemon juice over the carrots to brighten the flavors.
  9. Serve warm.

Notes

If the butter mixture is too thick, add a splash of water or lemon juice to loosen it before glazing. Watch the honey carefully during the final roast to avoid burning. For vegan adaptation, replace butter with coconut oil or vegan margarine and honey with maple syrup. Fresh thyme is preferred; if using dried thyme, reduce quantity by half to avoid bitterness.
