  • 34 pounds beef chuck roast
  • 4 cups beef broth (low-sodium)
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • 68 French rolls or baguettes
  • 2 tablespoons butter, softened (optional, for toasting rolls)

Instructions

  1. Pat the beef chuck roast dry with paper towels and season generously with salt and freshly ground black pepper on all sides.
  2. Place the sliced onion and minced garlic at the bottom of the slow cooker.
  3. Place the beef on top of the onions. Sprinkle dried thyme evenly over the roast, then pour Worcestershire sauce and beef broth around—not directly over—the meat.
  4. Cover and cook on low for 7-8 hours, or until the beef is fork-tender and shreds easily.
  5. Using tongs or a slotted spoon, transfer the roast to a cutting board. Slice thinly against the grain or shred with forks.
  6. Pour the cooking liquid through a fine-mesh sieve into a heatproof bowl or gravy boat. Taste and adjust seasoning with salt and pepper as needed.
  7. Optional: Spread softened butter on the inside of each roll and toast in a hot skillet or oven until golden and crisp.
  8. Assemble the sandwiches by piling sliced or shredded beef onto toasted rolls. Serve immediately with a small bowl of warm au jus for dipping.

Notes

If au jus is too thin, simmer on stove for 5-10 minutes to reduce and concentrate flavor. If too salty, add water or extra broth. Toast rolls with butter to prevent sogginess. Slice beef against the grain for tenderness. Leftovers store well in fridge up to 4 days; freeze beef and au jus separately.
