  • 1 tablespoon brown sugar
  • 1 teaspoon grated fresh ginger (or ½ teaspoon ground ginger)
  • ½ cup beef broth or water
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
  • Sesame seeds (optional garnish)
  • Thinly sliced green onions (optional garnish)

Instructions

  1. Prepare the Beef: In a medium bowl, combine the thinly sliced beef with 1 tablespoon soy sauce, 1 teaspoon cornstarch, and 1 teaspoon sesame oil. Toss well to coat evenly. Let marinate at room temperature for 10-15 minutes.
  2. Mix the Sauce: In a separate bowl, whisk together 3 tablespoons soy sauce, oyster sauce, brown sugar, grated ginger, and beef broth or water. Set aside.
  3. Cook the Broccoli: Heat wok or skillet over medium-high heat. Add oil, then toss in broccoli florets and sliced onion. Stir-fry for 3-4 minutes until broccoli is bright green and crisp-tender. Remove and set aside.
  4. Sear the Beef: Add more oil to the hot pan. Spread marinated beef in a single layer (cook in batches if needed). Sear undisturbed for 1 minute, then stir and cook another minute until browned but not overcooked.
  5. Combine & Sauce: Return broccoli and onions to the pan with beef. Stir sauce and pour over stir-fry. Toss and cook for 1-2 minutes while stirring gently.
  6. Thicken the Sauce: Stir cornstarch slurry again and drizzle into pan. Stir constantly until sauce thickens and coats beef and broccoli, about 30 seconds to 1 minute.
  7. Final Touches: Taste and adjust seasoning if needed. Remove from heat, sprinkle sesame seeds and green onions if desired, and serve immediately.

Notes

Cut beef thinly against the grain for tenderness. Marinate beef for at least 10 minutes. Avoid overcrowding pan; cook beef in batches if needed. Add cornstarch slurry last and stir constantly to avoid gloopy sauce. Use frozen broccoli thawed and drained if fresh is unavailable. For gluten-free, substitute tamari and gluten-free oyster sauce.
