A light, fruity, and refreshing chilled soup shooter made with watermelon, fresh mint, lime juice, and a touch of sweetness, perfect for summer parties and gatherings.

  • 4 cups seedless watermelon, cubed (about 600g)
  • 1/4 cup fresh mint leaves, packed
  • 2 tablespoons fresh lime juice
  • 12 teaspoons honey or agave syrup (optional)
  • Pinch of sea salt
  • 1/4 cup cold water (60ml)
  • Optional garnish: small mint leaves or thin lime slices

Instructions

  1. Cut the seedless watermelon into roughly 1-inch cubes, measuring about 4 cups (600g). Remove the rind.
  2. Rinse fresh mint leaves thoroughly and pat dry. Set aside about 1/4 cup packed leaves.
  3. In a blender, combine the watermelon cubes, fresh mint, lime juice, sea salt, and cold water. Add honey or agave syrup if desired. Blend on high for 1-2 minutes until smooth and vibrant pink.
  4. Optional: Pour the blended soup through a fine mesh sieve to remove pulp for a silky texture.
  5. Transfer the soup to a pitcher or bowl, cover, and refrigerate for at least 1 hour to chill and enhance flavors.
  6. Pour the chilled soup into shot glasses or small cups. Garnish each with a fresh mint leaf or a thin lime slice and serve immediately.

Notes

Taste the watermelon before adding honey or agave to balance sweetness. Straining is optional depending on desired texture. Chill shot glasses for extra refreshment. Prepare no more than a day ahead to maintain freshness. Add a splash of sparkling water before serving for a fizzy twist. For an adult version, add a splash of vodka or tequila just before serving.
