A quick and easy summer drink blending fresh strawberries, lemon juice, vodka, and ice into a perfectly icy, boozy slushie with a refreshing tart and sweet flavor.

  • 2 cups fresh strawberries, hulled and sliced (frozen works too)
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • 1/4 cup simple syrup (homemade or store-bought)
  • 1/2 cup vodka (white rum can be used as an alternative)
  • 3 cups ice cubes
  • 1/2 cup cold water or sparkling water (optional for lighter texture)
  • Mint leaves for garnish

Instructions

  1. Wash, hull, and slice about 2 cups of fresh strawberries. If using frozen, let them thaw slightly for easier blending.
  2. Squeeze 2-3 lemons to get 1/2 cup fresh lemon juice. Remove seeds to avoid bitterness.
  3. Make simple syrup if homemade: combine equal parts sugar and water in a small saucepan, heat gently until sugar dissolves, then cool. Use 1/4 cup for this recipe.
  4. In a high-speed blender, add strawberries, lemon juice, simple syrup, vodka, and ice cubes. Add 1/2 cup cold water or sparkling water if a lighter, fizzier texture is desired.
  5. Blend for about 2 minutes until the mixture is thick and slushie-like but not watery. Adjust consistency by adding a splash of water if too thick or more ice if too thin, then blend again.
  6. Pour into serving glasses and garnish with fresh mint leaves and optionally a lemon wheel on the rim.

Notes

Do not overblend to avoid melting the ice and diluting flavor. Use firm, ripe strawberries for best texture. Pre-freeze glasses for extra cold drinks. Adjust vodka and simple syrup to taste for strength and sweetness. For non-alcoholic version, omit vodka and use sparkling water.
