Refreshing Patriotic Strawberry Watermelon Mojito Popsicles

A vibrant and cooling summer treat blending fresh strawberries, juicy watermelon, mint, lime, and a subtle mojito touch with rum. Perfect for hot days and festive gatherings.

Ingredients

  • 1 ½ cups (225g) fresh strawberries, hulled and roughly chopped
  • 2 cups (300g) seedless watermelon, diced
  • ¼ cup (about 10g) fresh mint leaves, packed
  • Juice of 2 medium limes (about 2 tbsp or 30ml)
  • 2 tbsp (30ml) white rum (optional)
  • ¼ cup (60ml) simple syrup, homemade or store-bought
  • ½ cup (120ml) cold water

Instructions

  1. Rinse and hull the strawberries, then chop them roughly. Dice the watermelon into small cubes, removing any seeds. Set aside.
  2. Make simple syrup if needed by combining equal parts sugar and water in a small saucepan over medium heat. Stir until sugar dissolves completely, then cool before using.
  3. In a blender or food processor, combine the strawberries, watermelon, fresh mint leaves, lime juice, white rum, simple syrup, and cold water. Pulse until you get a smooth, slightly textured puree.
  4. Taste and adjust by adding more lime juice or simple syrup if desired.
  5. Pour the mixture evenly into popsicle molds, leaving a small gap at the top for expansion. Insert popsicle sticks if molds don’t have built-in handles.
  6. Freeze molds for at least 6 hours or overnight. Avoid opening the freezer during the first few hours to prevent ice crystals.
  7. To unmold, run warm water over the outside of the molds for a few seconds and gently pull on the sticks. Serve immediately.

Notes

Bruise mint leaves before blending to release aroma. Avoid over-blending to prevent bitterness. Use ripe fruit for best sweetness. Simple syrup helps maintain creamy texture and prevents icy popsicles. For non-alcoholic version, omit rum and add extra lime juice and simple syrup. Freeze at least 6 hours or overnight. Run warm water on molds to unmold easily.
