A refreshing and easy-to-make peach sweet tea infused with fresh mint, perfect for warm weather gatherings and casual afternoons.

Ingredients

Scale
  • 45 black tea bags (strong black tea like Lipton or Twinings)
  • 3 medium fresh ripe peaches, washed and sliced (skin on)
  • 1012 fresh mint leaves, washed and gently bruised
  • 3/4 cup granulated sugar (150 grams), adjust to taste
  • 8 cups filtered water (1.9 liters)
  • 2 tablespoons freshly squeezed lemon juice (optional)

Instructions

  1. Rinse 3 medium peaches and slice into thin wedges, keeping the skin on.
  2. In a large pot, add 4 cups (32 fl oz) of water and the sliced peaches. Bring to a gentle boil over medium heat, then reduce to a simmer for 10 minutes.
  3. Stir in 3/4 cup (150g) granulated sugar until dissolved. Remove the pot from heat, then add 4-5 black tea bags directly to the peach mixture. Let steep for 8-10 minutes.
  4. Using a fine mesh strainer, strain the warm peach tea syrup into a pitcher. Press the peaches lightly with the back of a spoon to extract extra juice, discarding solids.
  5. Bruise about 10-12 fresh mint leaves by gently crushing them between your fingers, then add them to the warm syrup. Let steep for 5 minutes, then remove the leaves.
  6. Add 4 cups (32 fl oz) of cold water to the pitcher to dilute the syrup. Stir gently and taste; adjust sweetness if needed by adding more sugar or honey dissolved in warm water.
  7. Add 2 tablespoons (1 fl oz) of freshly squeezed lemon juice for a subtle tang, if desired.
  8. Chill the tea in the refrigerator for at least 1 hour before serving.
  9. Serve poured over plenty of ice cubes and garnish with fresh mint sprigs or thin peach slices.

Notes

Do not oversteep the tea bags to avoid bitterness. Use ripe peaches for best flavor. Gently bruise mint leaves to release oils without bitterness. Adjust sweetness after diluting the syrup. For faster chilling, place the pitcher in an ice bath for 10 minutes after adding lemon juice.
