Refreshing Frozen Strawberry Lemonade Slushie

A quick and easy homemade summer drink combining frozen strawberries and fresh lemon juice for a perfectly balanced, refreshing slushie.

  • 2 cups (300g) frozen strawberries, unsweetened and firm
  • 1/2 cup (120ml) fresh lemon juice
  • 1/4 cup (60ml) honey or simple syrup, adjust to taste
  • 1 cup (240ml) cold water
  • 1 cup (about 150g) ice cubes
  • Optional: a handful of fresh mint leaves

Instructions

  1. Roll 3-4 fresh lemons on the counter to loosen the juice. Cut in half and juice enough to make 1/2 cup (120ml) of fresh lemon juice. Remove seeds. (About 5 minutes)
  2. In your blender jar, combine 2 cups (300g) of frozen strawberries, 1/2 cup (120ml) fresh lemon juice, 1/4 cup (60ml) honey or simple syrup, and 1 cup (240ml) cold water.
  3. Add 1 cup (about 150g) of ice cubes to give that slushie texture.
  4. Pulse the blender a few times to start, then blend on high for 30-45 seconds until the mixture is smooth and slushy. If too thick, add a splash more water; if too thin, add a few more ice cubes or frozen strawberries.
  5. Taste and adjust sweetness by adding a teaspoon or two more honey if needed, then blend briefly to mix.
  6. If using, add a handful of fresh mint leaves and pulse the blender 2-3 times to mix the flavor without pulverizing.
  7. Serve immediately in chilled glasses, garnished with a lemon slice or a sprig of mint if desired.

Notes

Use mid-range quality frozen strawberries without added sugar for best texture. Pulse blender first to avoid strain and overheating. Adjust sweetness and texture by adding more honey, water, or ice cubes as needed. Do not overfill blender to prevent leaks. For thicker slush, freeze strawberries overnight and reduce ice cubes.
