Refreshing Frozen Fruit Kabobs with Chocolate Drizzle

A cool and sweet summer treat featuring skewered frozen fresh fruit drizzled with melted chocolate, perfect for a light snack or dessert.

Ingredients

  • Fresh strawberries – hulled and halved if large
  • Fresh pineapple chunks – peeled and cut into bite-sized pieces
  • Seedless grapes – whole, preferably red or green
  • Fresh kiwi slices – peeled and cut into thick rounds or halves
  • Banana slices – about ½-inch thick (optional)
  • Good-quality semi-sweet chocolate chips or bars (e.g., Ghirardelli or Lindt) for melting and drizzling
  • Wooden or bamboo skewers – about 8 inches long
  • Optional: chopped nuts or shredded coconut for extra texture on the drizzle

Instructions

  1. Prepare the Fruit (10 minutes): Wash all the fruit thoroughly. Hull and halve the strawberries, peel and chunk the pineapple, slice the kiwi, and cut the bananas into ½-inch thick rounds. Pat the fruit dry with paper towels to reduce excess moisture.
  2. Assemble the Kabobs (10 minutes): Thread the fruit pieces onto the skewers, alternating colors and textures for a visually appealing kabob. Leave about 1 inch at the bottom of the skewer for holding.
  3. Freeze the Kabobs (at least 2 hours): Place the assembled kabobs on a parchment-lined baking sheet. Freeze them flat so they don’t stick together.
  4. Melt the Chocolate (5 minutes): Using a double boiler or microwave, gently melt the chocolate until smooth. If using the microwave, heat in 20-second bursts, stirring well between each burst.
  5. Drizzle the Chocolate (5 minutes): Once the kabobs are frozen solid, use a spoon or a small piping bag to drizzle the melted chocolate in thin lines over the fruit.
  6. Optional: Add Toppings (2 minutes): While the chocolate is still wet, sprinkle chopped nuts or shredded coconut over the kabobs.
  7. Final Freeze (10-15 minutes): Return the kabobs to the freezer for the chocolate to harden completely. Once set, they’re ready to enjoy or store in an airtight container for up to 3 days.

Notes

Pat fruit dry before freezing to help chocolate stick better. Use quality chocolate with at least 60% cacao for best flavor. Soak wooden skewers in water for 10 minutes if planning to grill or to prevent splintering. Work quickly when drizzling chocolate as it hardens fast on frozen fruit. Store kabobs in an airtight container in the freezer for up to 3 days.
