  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of garlic powder (optional)
  • Olive oil or butter for greasing the muffin tin

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your mini muffin tin with oil or butter.
  2. Crack 6 large eggs into a bowl. Add 1/4 cup cottage cheese or Greek yogurt and whisk until smooth and slightly frothy, about 1-2 minutes.
  3. Stir in 1/2 cup shredded cheese, 1/2 cup chopped spinach or preferred veggies, salt, pepper, and garlic powder until evenly distributed.
  4. Spoon the mixture evenly into the greased mini muffin tin cups, filling about 3/4 full (yields around 12 egg bites).
  5. Bake on the middle rack for 15-18 minutes. Check doneness by inserting a toothpick; it should come out clean or eggs should be firm but moist.
  6. Let the egg bites rest in the tin for 5 minutes before removing to firm up.
  7. Serve warm or cool completely and store in an airtight container in the fridge for up to 4 days.
