  • 3/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning

Instructions

  1. Pat the shrimp dry with paper towels and season lightly with salt, pepper, and half the Italian seasoning. Set aside.
  2. Heat 2 tablespoons of butter in a large skillet over medium heat until melted and shimmering, about 1-2 minutes. Add minced garlic and sauté until fragrant but not browned, about 30 seconds.
  3. Add shrimp to the skillet in a single layer. Cook for about 2 minutes on one side without moving, then flip and cook another 1-2 minutes until opaque and cooked through. Remove shrimp and set aside.
  4. In the same skillet, stir in chopped sun-dried tomatoes and fresh spinach. Cook until spinach wilts, about 2 minutes.
  5. Lower heat to medium-low. Add remaining 1 tablespoon butter and pour in heavy cream. Stir gently and let sauce thicken for 3-4 minutes until smooth.
  6. Stir in grated Parmesan cheese, remaining Italian seasoning, and red pepper flakes if using. Adjust salt and pepper to taste.
  7. Return shrimp to the pan and warm through for about 1 minute to combine flavors.
  8. Garnish with chopped fresh parsley and serve immediately over pasta, rice, or crusty bread.

Pat shrimp dry to ensure a good sear. Avoid burning garlic to prevent bitterness. Use medium heat to keep butter from browning too quickly and to allow cream to thicken nicely.
