  • 8 oz (225g) semisweet chocolate chips
  • 1 ½ cups (360ml) heavy cream, fresh and cold
  • 6 tbsp (85g) unsalted butter, softened
  • 2 ½ cups (300g) powdered sugar, sifted
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans with butter or non-stick spray, dust with cocoa powder, and line bottoms with parchment paper.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, salt, and espresso powder. Whisk to combine.
  3. In another bowl, beat eggs lightly. Add buttermilk, vegetable oil, and vanilla extract. Stir until blended but do not overmix.
  4. Slowly pour wet ingredients into dry ingredients, stirring gently until just combined. Carefully add boiling water and mix until smooth. Batter will be thin.
  5. Divide batter evenly between pans. Bake for 30-35 minutes, rotating pans halfway through. Test doneness with a toothpick; it should come out with moist crumbs.
  6. Cool cakes in pans for 15 minutes, then invert onto cooling racks. Remove parchment and cool completely before frosting.
  7. To make fudge frosting, heat heavy cream until just about to boil. Pour over semisweet chocolate chips in a heatproof bowl. Let sit 2 minutes, then stir until smooth and glossy. Let cool to room temperature.
  8. Beat in softened butter, powdered sugar, vanilla extract, and a pinch of salt until creamy and thick enough to spread.
  9. Assemble cake by placing one layer on a serving plate. Spread a generous layer of fudge frosting on top. Add second layer and frost top and sides evenly. Use an offset spatula for smooth edges. Chill briefly if frosting is too soft.
