  • 2 ½ cups (312g) all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (226g) unsalted butter, softened
  • 1 ¾ cups (350g) granulated sugar
  • 4 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (240ml) whole milk, room temperature
  • 8 oz (226g) cream cheese, softened
  • ½ cup (113g) unsalted butter, softened
  • 3 cups (360g) powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • Pinch of salt
  • 1 pint fresh strawberries, hulled and sliced
  • 1 pint fresh blueberries, washed and patted dry

Instructions

  1. Preheat oven to 350°F (175°C). Grease and lightly flour two 9-inch round cake pans and line bottoms with parchment paper.
  2. In a medium bowl, sift together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar with an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, fully incorporating each before adding the next. Stir in vanilla extract.
  5. Gradually add dry ingredients to the butter mixture in three parts, alternating with milk, beginning and ending with dry ingredients. Mix until just combined.
  6. Divide batter evenly between prepared pans and smooth tops.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Start checking at 28 minutes.
  8. Cool cakes in pans for 10 minutes, then turn out onto cooling racks to cool completely.
  9. For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar, beating until fluffy. Mix in vanilla extract and salt.
  10. Place one cake layer on serving plate. Spread a thin layer of frosting on top. Place second layer on top.
  11. Apply a thin crumb coat of frosting to entire cake and chill for 15 minutes.
  12. Finish with a thicker, smooth layer of frosting.
  13. Decorate by arranging sliced strawberries in horizontal stripes on one half of the cake for red stripes and cluster whole blueberries in a square in the upper left corner to mimic stars. Leave remaining cake frosted white for white stripes.

Notes

Use room temperature ingredients for best results. Do not overmix batter to avoid dense cake. Chill crumb coat before final frosting layer to prevent crumbs. Dry berries well before decorating to avoid moisture bleeding. If frosting softens while decorating, chill briefly. Use a sharp knife dipped in hot water for clean cake slices.
