  • 68 medium fresh figs, sliced
  • 4 oz (115 g) gorgonzola cheese, crumbled
  • 1/2 cup (50 g) walnuts, roughly chopped
  • 3 tablespoons honey, plus extra for drizzling
  • 2 tablespoons (28 g) unsalted butter
  • 2 tablespoons brown sugar
  • 1 teaspoon fresh thyme, chopped (optional)
  • Olive oil, for brushing
  • Pinch of sea salt

Instructions

  1. Preheat the oven to 425°F (220°C). Place a pizza stone in the oven if using.
  2. In a small saucepan, melt 2 tablespoons unsalted butter over medium heat. Add 1/2 cup chopped walnuts and 2 tablespoons brown sugar. Stir constantly for 3-5 minutes until sugar melts and coats walnuts evenly. Remove from heat and spread walnuts on parchment paper to cool and harden.
  3. Roll out pizza dough on a floured surface to about a 12-inch oval or rectangle, about 1/4 inch thick. Transfer to a parchment-lined baking sheet or pizza peel if using a stone.
  4. Lightly brush the flatbread surface with olive oil.
  5. Evenly distribute crumbled gorgonzola over the flatbread, leaving a small border around edges. Arrange sliced figs on top, overlapping slightly but not overcrowding.
  6. Bake on the preheated pizza stone or baking sheet for 12-15 minutes until crust is golden and crisp, cheese is melted and bubbly, and figs are softened but hold shape.
  7. Remove flatbread from oven. Scatter cooled candied walnuts over the top, drizzle 2 tablespoons honey evenly, and sprinkle with sea salt and fresh thyme if using.
  8. Slice and serve warm immediately.

Notes

Use medium heat and stir constantly when candying walnuts to avoid burning. Spread walnuts immediately on parchment to prevent clumping. Slice figs about 1/4 inch thick to maintain texture. Preheat pizza stone at least 30 minutes for best crust. Tent edges with foil if browning too fast. For gluten-free, use almond flour flatbread; for vegan, substitute gorgonzola with plant-based cheese and honey with maple syrup.
