A simple and elegant summer flatbread featuring smoky grilled peaches, a sticky honey balsamic glaze, and creamy burrata cheese, perfect for easy entertaining.

  • 34 ripe but firm peaches, halved and pitted
  • 1 (8-ounce) ball burrata cheese
  • 1 (12-inch) flatbread or naan
  • 2 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • A handful of fresh basil leaves, torn
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Lemon zest from one lemon (optional)

Instructions

  1. Preheat the grill or grill pan to medium-high heat, about 400°F (200°C).
  2. In a small bowl, whisk together honey and balsamic vinegar until smooth. Set aside.
  3. Halve and pit the peaches, leaving the skin on. Brush each side lightly with olive oil.
  4. Place peaches cut side down on the grill and cook for 3-4 minutes until grill marks appear and peaches soften slightly. Flip and grill the skin side for 2 more minutes.
  5. While peaches grill, place the flatbread on the grill for 1-2 minutes per side until warm and slightly crispy.
  6. Remove flatbread from grill and brush lightly with olive oil. Scatter torn basil leaves over the surface.
  7. Arrange the warm grilled peach halves evenly over the flatbread.
  8. Drizzle the honey balsamic glaze over the peaches and flatbread.
  9. Tear the burrata into chunks and scatter on top while the flatbread is still warm.
  10. Season with sea salt, freshly ground black pepper, and lemon zest if using. Add a few more basil leaves for garnish.
  11. Slice into wedges and serve immediately.

Notes

If peaches are too firm, grill an extra minute but avoid burning the skin. Adjust glaze sweetness by adding more honey or balsamic vinegar. Burrata is delicate; add just before serving to maintain creamy texture. For gluten-free, substitute flatbread with gluten-free crust or sturdy lettuce leaves. Vegan options include plant-based cheese and maple syrup instead of honey.
