Perfect Grilled Wagyu Hot Dogs Recipe Easy Homemade Gourmet Buns

Juicy, rich wagyu hot dogs grilled to perfection and served on buttery brioche buns with gourmet toppings for a simple yet indulgent meal.

  • 4 wagyu hot dogs (about 16 oz / 450 g)
  • 4 brioche buns (soft, fresh)
  • 2 tablespoons unsalted butter, softened
  • 2 tablespoons yellow mustard
  • 2 tablespoons ketchup
  • 3 tablespoons dill pickle relish
  • 1 cup caramelized onions (optional but recommended)
  • ½ cup shredded cheddar cheese
  • Fresh jalapeño slices (to taste)
  • A handful fresh arugula or microgreens
  • Sea salt and freshly ground black pepper
  • Optional: Sriracha or preferred hot sauce

Instructions

  1. Caramelize the onions (if using): Slice 2 large yellow onions thinly. Heat 1 tablespoon olive oil in a skillet over medium-low heat. Add onions, a pinch of salt, and stir occasionally for 25-30 minutes until deep golden and soft. Set aside to cool.
  2. Preheat the grill to medium-high heat, around 375°F (190°C). If using a grill pan, preheat on medium-high stove heat.
  3. Spread softened butter evenly on the cut sides of each brioche bun.
  4. Place buns butter-side down on the grill for 1-2 minutes until golden brown and slightly crisp.
  5. Lightly sprinkle both sides of the wagyu hot dogs with sea salt and freshly ground black pepper.
  6. Place hot dogs on the grill and cook for about 5-6 minutes, turning every 2 minutes to get even grill marks and a slight char. Avoid piercing the hot dogs.
  7. Lay each grilled hot dog in a toasted brioche bun. Spread a thin layer of yellow mustard and ketchup on the bun if desired.
  8. Spoon a generous amount of caramelized onions over the hot dog, sprinkle shredded cheddar cheese, add dill pickle relish, fresh jalapeño slices, and a handful of arugula or microgreens.
  9. Drizzle with sriracha or hot sauce if desired. Serve immediately while warm and juicy.
  10. Optional: For melted cheese, place assembled hot dogs back on the grill for 30 seconds with a loose foil tent on top.

Notes

Do not pierce the hot dogs to retain juices. Toast buns separately with butter to prevent sogginess. Caramelize onions low and slow for best flavor. Use a foil tent to melt cheese without burning buns. If grilling indoors, preheat grill pan well and watch closely to avoid burning.
