  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 8 oz (225 g) pound cake or sponge cake, sliced thinly
  • Fresh strawberries, hulled and sliced
  • Raspberry jam or strawberry glaze
  • Fresh raspberries and blueberries
  • Pink and white sprinkles
  • Edible flowers (optional)
  • White chocolate shavings
  • Mint leaves

Instructions

  1. In a cold mixing bowl, combine 1 cup heavy whipping cream, 2 tablespoons powdered sugar, and 1 teaspoon vanilla extract. Beat with an electric mixer on medium-high speed until soft peaks form (about 3-5 minutes).
  2. Using a serrated knife, slice the pound cake into 1/4-inch thick strips, about 3 inches long.
  3. Lay a piece of plastic wrap on your workspace. Place a cake slice on it and spread a thin layer of raspberry jam or strawberry glaze evenly over the surface.
  4. Place a few sliced strawberries along one edge of the cake slice. Using the plastic wrap to help, gently roll the cake over the fruit, forming a tight sushi roll. Chill in the refrigerator for 10-15 minutes to set the shape.
  5. On your serving platter, spread a thin layer of whipped cream as the ‘rice.’ Slice the chilled cake rolls into bite-sized pieces (about 1 inch thick). Arrange them artfully on the whipped cream base.
  6. Dot the board with fresh raspberries, blueberries, white chocolate shavings, and pink and white sprinkles. Scatter edible flowers and mint leaves for a festive look.
  7. Drizzle a little extra strawberry glaze if desired. Keep the board chilled until serving, but bring it to room temperature 10 minutes before guests arrive.

Notes

Chill mixing bowl and beaters before whipping cream for best results. Use a serrated knife to slice cake evenly. If cake is crumbly, microwave for 10 seconds to soften. Spread jam thinly to avoid sogginess. Bring dessert to room temperature 10 minutes before serving for best flavor.
