  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (226 g) unsalted butter, softened to room temperature
  • 1 ¾ cups (350 g) granulated sugar
  • 4 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (240 ml) whole milk, room temperature
  • ½ cup (about 90 g) rainbow sprinkles (jimmies)
  • For the Vanilla Buttercream Frosting:
  • 1 cup (226 g) unsalted butter, softened to room temperature
  • 4 cups (480 g) powdered sugar, sifted
  • 2 teaspoons pure vanilla extract
  • 24 tablespoons (3060 ml) whole milk or heavy cream
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch cake pans or line with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar on medium-high speed until light and fluffy, about 3-4 minutes.
  4. Add eggs one at a time, beating well after each addition, then mix in the vanilla extract.
  5. Reduce mixer speed to low. Alternately add the flour mixture in three parts with the milk, starting and ending with flour. Mix just until combined.
  6. Gently fold in the rainbow sprinkles with a rubber spatula, being careful not to overmix.
  7. Divide the batter evenly between the prepared pans and smooth the tops.
  8. Bake for 25-30 minutes, checking at 25 minutes with a toothpick; it should come out clean or with a few moist crumbs.
  9. Cool cakes in pans for 10 minutes, then transfer to cooling racks to cool completely.
  10. For the frosting, beat the softened butter until creamy. Gradually add powdered sugar on low speed.
  11. Add vanilla extract, salt, and milk or cream to reach desired consistency. Beat on medium-high for 3 minutes until fluffy.
  12. Assemble the cake by placing one layer on a plate, spreading frosting on top, adding the second layer, and frosting the top and sides evenly.
  13. For a smooth finish, dip your spatula in warm water and glide over the frosting.

Notes

Use room temperature ingredients for best texture. Fold sprinkles gently to avoid color bleeding. If buttercream is too soft, refrigerate for 10 minutes before frosting. Keep spatula warm for smooth frosting finish. Can be adapted for gluten-free or dairy-free diets.
