Instructions

  1. Prepare the peaches by peeling using a paring knife or blanching in boiling water for 30 seconds, then plunging into ice water. Slice peaches into ½-inch thick wedges.
  2. In a medium bowl, combine sliced peaches with ½ cup granulated sugar, 2 tablespoons brown sugar, cinnamon, nutmeg, lemon juice, cornstarch, and salt. Toss gently and let sit for 10 minutes.
  3. Brown the butter in a medium skillet over medium heat, stirring frequently until golden brown and nutty smelling (5-7 minutes). Remove from heat and cool slightly.
  4. In a mixing bowl, whisk together flour, baking powder, salt, and ⅓ cup sugar. Slowly pour in browned butter, then add milk and vanilla extract. Stir gently until just combined.
  5. Transfer peach mixture with juices into a 9×9-inch baking dish, spreading evenly. Spoon topping batter over peaches in dollops, leaving some peach edges exposed.
