  • 6 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup heavy whipping cream, cold
  • ½ cup powdered sugar, sifted
  • 2 tbsp blue raspberry syrup
  • 1 cup mascarpone cheese (or substitute with full-fat cream cheese)
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • Optional toppings: fresh blueberries and sliced strawberries
  • Optional toppings: whipped cream dollops

Instructions

  1. Crush the Oreos finely using a food processor or place them in a zip-top bag and crush with a rolling pin until mostly fine crumbs remain with a few small chunks for texture.
  2. Transfer crushed Oreos to a bowl and mix in the melted butter until all crumbs are moistened.
  3. Press this mixture firmly into the bottom of a 9×9-inch dish to form an even crust layer. Chill in the fridge for at least 10 minutes to set.
  4. In a mixing bowl, beat the softened cream cheese until creamy and smooth, about 2 minutes on medium speed.
  5. Gradually add ½ cup powdered sugar and continue mixing.
  6. In a separate chilled bowl, whip the heavy cream to stiff peaks.
  7. Gently fold the whipped cream into the cream cheese mixture, then stir in the blue raspberry syrup carefully to keep the vibrant color.
  8. In another bowl, combine the mascarpone cheese, ½ cup powdered sugar, and vanilla extract. Beat until smooth and creamy.
  9. Spread half of the blue raspberry cream evenly over the chilled Oreo crust.
  10. Sprinkle half of the remaining crushed Oreos over the cream layer for crunch.
  11. Spread the white cream layer gently over the Oreo crumbs.
  12. Repeat with the remaining blue raspberry cream and top off with the last bit of crushed Oreos.
  13. Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  14. Before serving, add fresh blueberries and sliced strawberries on top, along with whipped cream dollops if desired.

Soften cream cheese well ahead of time to avoid lumps. Fold whipped cream gently to keep airiness. Chill at least 4 hours or overnight for best texture. Use a sharp knife warmed under hot water and wiped clean between slices for neat layers. For gluten-free, substitute Oreos with gluten-free cookies.
