  • 1 teaspoon pure vanilla extract
  • 8 oz (226g) cream cheese, softened
  • ¼ cup (50g) granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • ½ cup (60g) chopped pecans, toasted
  • ⅓ cup (67g) light brown sugar, packed
  • ¼ cup (32g) all-purpose flour
  • 3 tablespoons (42g) unsalted butter, cold and cubed
  • 1 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with liners or grease it well.
  2. Prepare the streusel topping: In a small bowl, mix chopped pecans, brown sugar, flour, cinnamon, and salt. Cut in cold butter with a fork or pastry cutter until the mixture resembles coarse crumbs. Set aside.
  3. Mix the pumpkin muffin batter: In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. In another bowl, combine granulated sugar, brown sugar, and oil (or melted butter). Add eggs one at a time, whisking well after each. Stir in pumpkin puree and vanilla extract.
  4. Combine wet and dry ingredients: Slowly add dry ingredients to the wet mixture, folding gently with a spatula until just combined. Don’t overmix—the batter should be thick but smooth.
  5. Make the cream cheese swirl: Beat softened cream cheese, sugar, egg yolk, and vanilla extract in a medium bowl until smooth and fluffy.
  6. Assemble the muffins: Spoon about 2 tablespoons (30ml) of pumpkin batter into each muffin cup. Dollop a tablespoon of cream cheese mixture on top, then add another 2 tablespoons of pumpkin batter. Use a skewer or butter knife to gently swirl the cream cheese through the batter—don’t overdo it or the swirl will disappear.
  7. Add the streusel topping: Sprinkle a generous pinch of brown sugar pecan streusel over each muffin for that crunchy, sweet finish.
  8. Bake for 20-25 minutes. Check for doneness by inserting a toothpick near the edge (avoid the cream cheese swirl area) – it should come out with a few moist crumbs but no wet batter.
  9. Cool in the pan for 10 minutes. Then transfer muffins to a wire rack to cool completely or enjoy warm.

Notes

Let cream cheese soften at room temperature for about 30 minutes before mixing for smooth swirls. Toast pecans for 5 minutes in a dry pan to enhance flavor.
