  • ½ cup (100g) granulated sugar
  • ½ cup (110g, packed) brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • 1¼ cups (300g) pumpkin puree (canned or fresh)
  • ⅓ cup (80ml) vegetable oil
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 1 cup (170g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×5-inch loaf pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine 2 cups (240g) all-purpose flour, ½ cup (100g) granulated sugar, ½ cup (110g) packed brown sugar, 1 teaspoon baking soda, ½ teaspoon salt, 1 teaspoon cinnamon, ½ teaspoon nutmeg, and ¼ teaspoon ground ginger. Stir until evenly blended.
  3. Add 1¼ cups (300g) pumpkin puree, ⅓ cup (80ml) vegetable oil, 2 large eggs (room temperature), and 1 teaspoon vanilla extract to the dry mixture. Stir gently until just combined; some lumps are okay.
  4. Fold in 1 cup (170g) semi-sweet chocolate chips gently to distribute evenly.
  5. Scrape the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Start checking at 55 minutes.
  7. Remove from oven and let cool in the pan for about 15 minutes, then transfer to a cooling rack to cool completely.

Notes

Use room temperature eggs for smoother mixing. Do not overmix the batter to keep the bread tender. If edges brown too fast, tent with foil halfway through baking. Toss chocolate chips in a little flour before folding to prevent sinking. A splash of milk (up to 2 tablespoons) can loosen thick batter without losing moisture.
