  • 4 large eggs, room temperature
  • Zest from 2 medium lemons
  • ¼ cup (60 ml) freshly squeezed lemon juice
  • 1 ½ cups (225 g) fresh blueberries
  • 1 ½ teaspoons vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan thoroughly with butter or non-stick spray, and line with parchment paper if desired.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy, about 3 to 5 minutes.
  4. Beat in the eggs one at a time, scraping down the bowl after each addition.
  5. Mix in the sour cream, lemon zest, lemon juice, and vanilla extract until just combined.
  6. Gradually fold the dry ingredients into the wet ingredients gently, avoiding overmixing.
  7. Carefully fold in the blueberries to avoid crushing them.
  8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  9. Bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Start checking at 50 minutes.
  10. Let the cake cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
