  • 3 medium ripe bananas, mashed
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ⅔ cup (135g) granulated sugar
  • ½ cup (115g) unsalted butter, melted
  • 2 large eggs, room temperature
  • ¼ cup (60ml) sour cream (can substitute Greek yogurt)
  • 1 teaspoon vanilla extract
  • 1 cup (170g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your muffin pan or line with paper liners.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In another bowl, mash the bananas until smooth but slightly chunky. Add sugar, melted butter (cooled), eggs, sour cream, and vanilla extract. Whisk until combined.
  4. Pour the wet mixture into the dry ingredients. Fold gently with a spatula just until combined; do not overmix.
  5. Fold in the chocolate chips, reserving a few to sprinkle on top.
  6. Spoon the batter into the muffin cups, filling each about ¾ full.
  7. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  8. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter to avoid dense muffins. Use ripe bananas for best sweetness and moisture. Sour cream or Greek yogurt adds extra moistness. Muffins can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 3 months.
