Instructions

  1. Preheat your oven to 400°F (200°C). Scrub the sweet potatoes clean and prick them a few times with a fork to let steam escape.
  2. Place the sweet potatoes on a baking sheet and roast for 45-50 minutes, turning once halfway through, until skins are tender and flesh is soft. Alternatively, microwave for 8-10 minutes if short on time.
  3. Heat olive oil in a skillet over medium heat. Add diced onion and cook for about 3 minutes until translucent.
  4. Add minced garlic, smoked paprika, cumin, and chili flakes (if using). Stir for 30 seconds to release aromas, avoiding burning the garlic.
  5. Add ground turkey to the skillet. Break it up and cook for 7-10 minutes until fully browned. Season with salt and pepper.
  6. Mix Greek yogurt with lemon juice in a small bowl to brighten the flavor.
  7. Once sweet potatoes are done, let cool for a few minutes. Slice open lengthwise without cutting all the way through.
  8. Use a fork to fluff the sweet potato insides, creating a well for the filling.
  9. Fill each sweet potato generously with the turkey mixture.
  10. Top with a spoonful of the lemony Greek yogurt and sprinkle with fresh parsley or cilantro.
