A refreshing and easy summer snack featuring juicy watermelon slices topped with creamy whipped feta, fresh herbs, cherry tomatoes, and a drizzle of balsamic glaze. Perfect for hot days and casual gatherings.

  • Thick, round slices of seedless, ripe watermelon (cut into wedges or rounds)
  • 8 oz feta cheese (block or crumbled, preferably sheep’s milk feta)
  • 4 oz softened cream cheese or Greek yogurt
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons fresh mint, chopped
  • 12 cherry tomatoes, halved
  • Balsamic glaze, for drizzling
  • Extra virgin olive oil, for drizzling
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Optional toppings: crushed pistachios, thinly sliced red onion, chili flakes

Instructions

  1. Wash the watermelon thoroughly and slice into 1-inch thick rounds. Cut each round into 6-8 wedges or use cookie cutters for fun shapes.
  2. In a mixing bowl, crumble 8 oz of feta cheese. Add 4 oz of softened cream cheese or Greek yogurt. Whip with an electric hand mixer or food processor until smooth and creamy, about 2-3 minutes. Add 1 teaspoon olive oil and a pinch of black pepper to enhance flavor.
  3. Rinse and halve about 12 cherry tomatoes. Chop fresh basil and mint leaves finely, about 2 tablespoons each. Prepare optional toppings if using.
  4. Spread about 1 tablespoon of whipped feta onto each watermelon wedge. Arrange cherry tomato halves and sprinkle with fresh herbs. Add optional toppings if desired.
  5. Lightly drizzle balsamic glaze and extra virgin olive oil over the assembled bites. Sprinkle with a tiny pinch of sea salt to taste.
  6. Serve immediately or refrigerate for up to 2 hours before serving to keep cool and refreshing.

Notes

If the whipped feta mixture is too thick, add 1 teaspoon of milk or water at a time to loosen for easier spreading. Use ripe, firm watermelon to avoid sogginess. Serve chilled for best flavor and texture. For a dairy-free option, substitute feta and cream cheese with vegan cream cheese and replace balsamic glaze with agave syrup and lemon juice.
