A refreshing and easy summer salad combining juicy watermelon, creamy feta, fresh mint, and a tangy balsamic glaze for a perfect balance of sweet and salty flavors.

Ingredients

  • 4 cups seedless watermelon, cubed (about 600g or 1.3 lbs)
  • 1 cup crumbled feta cheese (about 150g or 5.3 oz)
  • 1/4 cup chopped fresh mint leaves (loosely packed)
  • 23 tablespoons balsamic glaze or reduction
  • 1 tablespoon extra virgin olive oil (optional)
  • Freshly ground black pepper, a pinch or two
  • Sea salt, a dash to taste

Instructions

  1. Cut off the rind and slice the watermelon into roughly 1-inch cubes (about 4 cups or 600g).
  2. Rinse fresh mint leaves, pat dry, then finely chop about 1/4 cup loosely packed leaves.
  3. In a large mixing bowl, gently toss the watermelon cubes with crumbled feta and chopped mint.
  4. Lightly sprinkle sea salt and freshly ground black pepper over the bowl. Drizzle 1 tablespoon of extra virgin olive oil if using.
  5. Just before serving, drizzle 2–3 tablespoons of balsamic glaze evenly over the salad. Toss lightly or serve with glaze on top.
  6. Taste and adjust seasoning if needed. Serve immediately or refrigerate for up to 30 minutes to let flavors mingle.

Notes

Use a sharp knife to cube watermelon neatly to avoid mushiness. Add mint just before serving to preserve freshness. If feta is very salty, skip added sea salt. Balsamic glaze can be homemade by reducing balsamic vinegar. For vegan option, replace feta with marinated tofu or nut-based cheese.
