Fresh Star-Shaped Watermelon Pops

Refreshing and fun star-shaped watermelon pops that are perfect for cooling down on hot summer days. Simple to make with just watermelon, lime juice, and optional sweetener.

Ingredients

  • About 4 cups seedless watermelon, cut into thick slices
  • 12 tablespoons fresh lime juice
  • 1 teaspoon honey or agave syrup (optional)
  • Wooden popsicle sticks
  • Star-shaped cookie cutter (3-4 inches wide)

Instructions

  1. Chill the whole watermelon in the fridge for at least 2 hours to keep it firm.
  2. Slice the watermelon into 1-inch thick rounds.
  3. Use the star-shaped cookie cutter to cut out star shapes from each round.
  4. Mix lime juice with honey or agave syrup if using, and lightly brush or drizzle over each watermelon star.
  5. Insert a wooden popsicle stick halfway into one side of each watermelon star carefully.
  6. Place the pops on a baking sheet lined with parchment paper and freeze for at least 2 hours or until solid.
  7. Serve frozen or chilled; let frozen pops sit at room temperature for a few minutes before eating to soften slightly.

Notes

Chill the watermelon before slicing to keep it firm and easier to cut. Use parchment paper on the baking sheet to prevent pops from sticking. Let frozen pops thaw a few minutes before eating for easier biting. Optional honey or agave syrup can be added for extra sweetness. Any fun cookie cutter shape can be used instead of stars.
