A no-melt, fresh trail mix featuring toasted coconut flakes, dried mango, nuts, and seeds, perfect for beach days and summer snacks. This mix stays fresh and dry even in hot weather without sticky messes.

  • 1 cup dried mango chunks (unsweetened preferred)
  • 1 cup unsweetened coconut flakes (medium to large flakes)
  • 1 cup raw almonds (whole or sliced)
  • 1 cup cashews
  • 1/2 cup pumpkin seeds (pepitas)
  • 1/2 cup sunflower seeds
  • Pinch of sea salt
  • Optional: 1/2 cup dried pineapple or papaya

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Spread the unsweetened coconut flakes evenly on a baking sheet. Toast in the oven for about 5-7 minutes, stirring once halfway through. Watch closely to avoid burning.
  3. While the coconut toasts, spread raw almonds, cashews, pumpkin seeds, and sunflower seeds on another baking sheet. Toast in the oven for 10 minutes, stirring every 3 minutes for even browning.
  4. Remove both trays from the oven and let the coconut and nuts cool completely to prevent sogginess.
  5. In a large mixing bowl, combine the toasted coconut, toasted nuts and seeds, and dried mango chunks. Add optional dried pineapple or papaya if using.
  6. Sprinkle a pinch of sea salt over the mixture and toss gently to distribute evenly.
  7. Transfer the trail mix into an airtight container or resealable bag. Store at room temperature until ready to enjoy.

Notes

Toast coconut flakes and nuts carefully to avoid burning; stir frequently. Cool ingredients completely before mixing to prevent sogginess. Avoid chocolate or sticky ingredients to maintain no-melt quality. Nut-free version can be made by replacing nuts with extra seeds or roasted chickpeas.
