  • ½ cup (45g) old-fashioned rolled oats
  • 1 medium fresh peach, diced (about 130g)
  • ½ cup (120g) Greek yogurt, plain or vanilla
  • 2 tablespoons (32g) honey almond butter
  • ½ cup (120ml) milk of choice (almond, oat, cow’s milk)
  • 1 tablespoon (15g) chia seeds (optional)
  • ½ teaspoon vanilla extract (optional)
  • A pinch of cinnamon (optional)
  • A tiny pinch of salt

Instructions

  1. Rinse and pat dry the peach. Dice into small, ½ inch pieces. Set aside.
  2. In a mixing bowl or mason jar, combine oats, chia seeds (if using), salt, and cinnamon. Stir to mix evenly.
  3. Add milk, Greek yogurt, and vanilla extract (if using). Mix well until oats are coated and chia seeds start to disperse.
  4. Add honey almond butter and gently swirl it into the mixture without overmixing.
  5. Fold in the diced peach pieces carefully to keep them intact.
  6. Seal the container tightly and refrigerate for at least 6 hours or overnight.
  7. In the morning, stir gently. Add more milk if too thick. Optionally top with extra peach slices, honey drizzle, or slivered almonds.

Notes

Use old-fashioned rolled oats for best texture; quick oats may become mushy. Fold in peaches last to keep them fresh and juicy. Adjust milk quantity to preferred consistency. Can be stored up to 3 days in fridge. For vegan option, use plant-based yogurt and milk, and replace honey with maple syrup or agave.
