Fresh Healthy Cowboy Caviar with Creamy Avocado

A quick, fresh, and satisfying cowboy caviar salad featuring black beans, corn, cherry tomatoes, and a creamy avocado dressing. Perfect as a snack, side dish, or light meal.

  • 1 can (15 oz / 425 g) black beans, rinsed and drained
  • 1 can (15 oz / 425 g) corn kernels, drained (fresh or frozen works too)
  • 1 cup (150 g) cherry tomatoes, halved
  • 1 small red bell pepper, diced
  • 1/4 cup (40 g) red onion, finely chopped
  • 1/4 cup (15 g) fresh cilantro, chopped (optional but recommended)
  • 1 ripe avocado, peeled and pitted
  • Juice of 1 lime
  • 1 garlic clove, minced
  • 2 tablespoons (30 ml) olive oil (extra virgin preferred)
  • 1/4 teaspoon cumin
  • Salt and pepper, to taste
  • Water, as needed for thinning the dressing

Instructions

  1. Rinse and drain the black beans and corn thoroughly to avoid extra moisture. Halve the cherry tomatoes, dice the red bell pepper, finely chop the red onion, and roughly chop the cilantro. Set aside. (Approx. 10 minutes)
  2. In a blender or food processor, combine the ripe avocado, lime juice, minced garlic, olive oil, cumin, salt, and pepper. Blend until smooth, adding water one tablespoon at a time to thin the dressing to your preferred consistency. It should be creamy but pourable. (Approx. 5 minutes)
  3. In a medium bowl, gently fold together the black beans, corn, tomatoes, bell pepper, red onion, and cilantro. Pour the creamy avocado dressing over the mixture and toss lightly until everything is evenly coated. (Approx. 5 minutes)
  4. Taste and add extra salt, pepper, or lime juice as needed. For best flavor, let the cowboy caviar chill in the fridge for at least 20 minutes before serving so the flavors meld beautifully. (Optional but recommended)
  5. Spoon the cowboy caviar into a serving dish or individual bowls. It’s fantastic on its own, with tortilla chips, or as a topping for grilled meats or tacos.

Notes

Use ripe avocados for a creamy dressing. Drain canned beans and corn well to avoid watery salad. Let the salad chill for at least 20 minutes for best flavor. If no blender is available, mash avocado with a fork and whisk in other dressing ingredients. Add jalapeño or smoked paprika for a spicy kick. Can substitute beans or add protein like grilled chicken or shrimp.
