Fresh Grilled Nectarine Burrata Salad with Easy Honey Balsamic Dressing

A refreshing and sophisticated salad featuring grilled nectarines, creamy burrata, and a tangy-sweet honey balsamic dressing. Perfect for summer entertaining or a light meal.

  • 4 ripe nectarines, halved and pitted
  • 8 ounces burrata cheese, room temperature
  • 4 cups mixed greens (arugula, baby spinach, or spring mix)
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • 1/4 cup extra-virgin olive oil
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper, to taste
  • A handful fresh basil leaves, torn
  • 1/4 cup toasted pine nuts or walnuts (optional)
  • Sea salt for sprinkling

Instructions

  1. Preheat the grill or grill pan to medium-high heat (about 400°F).
  2. Rinse and halve the nectarines, removing the pits. Lightly brush the cut sides with olive oil.
  3. Place nectarines cut-side down on the grill. Grill for 3-4 minutes until grill marks appear and nectarines soften slightly but hold their shape. Flip and grill for another 2 minutes on the skin side. Remove and let cool.
  4. In a bowl, whisk together balsamic vinegar, honey, and Dijon mustard. Slowly drizzle in olive oil while whisking to emulsify. Season with salt and pepper to taste.
  5. Toast pine nuts or walnuts in a small dry skillet over medium heat until golden and fragrant, about 3 minutes. Stir or shake pan often to prevent burning. Remove from heat and let cool.
  6. On a large serving platter or bowl, arrange mixed greens and torn basil leaves. Slice grilled nectarines into wedges and scatter over greens. Tear burrata into large chunks and distribute over the top.
  7. Drizzle the honey balsamic dressing evenly over the salad. Sprinkle toasted nuts and a pinch of flaky sea salt over the burrata and nectarines.
  8. Serve immediately while burrata is soft and nectarines are still warm.

Notes

Bring burrata to room temperature before assembling for best texture. Toast nuts carefully to avoid burning. Dressing can be made ahead and stored in the fridge to deepen flavor. For vegan version, substitute burrata with cashew cheese and honey with maple syrup. Nectarines can be substituted with peaches or plums when out of season.
