  • 4 ears fresh corn on the cob, husked and cleaned
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/4 cup fresh cilantro, finely chopped
  • 2 tablespoons freshly squeezed lime juice
  • 1 small garlic clove, minced (optional)
  • 1/2 teaspoon kosher salt, or to taste
  • Pinch of freshly ground black pepper
  • 1/4 teaspoon smoked paprika (optional)

Instructions

  1. Husk the corn, removing all silk strands. Rinse under cold water and pat dry with a clean kitchen towel (about 5 minutes).
  2. In a mixing bowl, combine softened butter, chopped cilantro, lime juice, minced garlic (if using), kosher salt, black pepper, and smoked paprika (if using). Mix thoroughly until smooth and evenly incorporated.
  3. Preheat grill to medium-high heat (about 400°F). Clean and lightly oil the grates. If using a grill pan, heat over medium-high and brush with oil.
  4. Place husked corn directly on the grill grates. Grill for 10-15 minutes, turning every 2-3 minutes with tongs to get even char marks. Kernels should be tender and slightly charred.
  5. Remove corn from grill and immediately brush generously with the cilantro lime butter. For extra flavor, spread another layer before serving.
  6. Serve the corn warm with extra lime wedges on the side.

Notes

For a dairy-free version, substitute butter with a plant-based alternative like vegan butter or coconut oil and omit garlic if preferred. To add a spicy kick, sprinkle chili powder or cotija cheese over the buttered corn. If no grill is available, roast corn in a 425°F oven for 20-25 minutes, turning halfway.
