  • 2 medium cucumbers (English or Persian preferred)
  • 3 large ripe tomatoes (vine-ripened or heirloom preferred)
  • 2 tablespoons fresh dill, finely chopped
  • 3 tablespoons white wine vinegar
  • 4 tablespoons extra virgin olive oil
  • 1/2 small red onion, thinly sliced (optional)
  • 1 teaspoon sugar
  • 1 small garlic clove, minced (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Wash cucumbers and tomatoes well. Slice cucumbers into thin half-moons about 1/4 inch thick. Cut tomatoes into bite-sized wedges roughly 1 inch pieces. Thinly slice the red onion into half-moons. Place all the veggies into a large mixing bowl.
  2. Rinse fresh dill and pat dry. Strip the leaves from the stems and finely chop to measure about 2 tablespoons. Add to the bowl with the veggies.
  3. In a small bowl, whisk together 3 tablespoons white wine vinegar, 4 tablespoons extra virgin olive oil, 1 teaspoon sugar, minced garlic (if using), and a pinch of salt and pepper until the sugar dissolves and the dressing emulsifies.
  4. Pour the dressing over the cucumbers, tomatoes, onions, and dill. Gently toss with salad tongs or two large spoons until everything is evenly coated and glossy.
  5. Let the salad sit at room temperature or chill in the fridge for 10-15 minutes before serving to allow flavors to meld and cucumbers to soften slightly without losing crunch.

Notes

Do not overdress the salad to avoid sogginess. Use fresh dill for best flavor; parsley or mint can be substituted if needed. Let the salad rest for 10-15 minutes before serving to meld flavors. Drain excess liquid if salad appears watery before serving.
