A quick and easy fresh cowboy caviar dip featuring black beans, corn, and creamy mashed avocado with a zesty lime and cumin flavor. Perfect for snacks, parties, or as a topping for grilled meats.

  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • 1 can (15 oz / 425 g) corn kernels or 1½ cups (225 g) fresh or frozen corn, thawed
  • 2 medium ripe avocados, peeled and pitted
  • 1 cup (150 g) cherry tomatoes, halved
  • ¼ cup (40 g) red onion, finely diced
  • ¼ cup (10 g) fresh cilantro, chopped (optional)
  • 1 small jalapeño, seeded and minced
  • 2 tablespoons (30 ml) freshly squeezed lime juice
  • 1 clove garlic, minced
  • 1 tablespoon (15 ml) extra virgin olive oil
  • ½ teaspoon (2.5 ml) ground cumin
  • Salt and black pepper to taste

Instructions

  1. Drain and rinse the black beans and corn under cold water until water runs clear.
  2. Halve the cherry tomatoes, finely dice the red onion, chop the cilantro, and mince the jalapeño and garlic.
  3. In a mixing bowl, mash the avocado with a fork or potato masher until smooth but slightly chunky. Add lime juice, olive oil, minced garlic, cumin, salt, and pepper. Mix until creamy and combined.
  4. Fold in the black beans, corn, tomatoes, onion, jalapeño, and cilantro gently into the avocado mixture. Stir just enough to mix without mashing the tomatoes or beans.
  5. Taste and adjust seasoning with more lime juice, salt, or cumin as desired.
  6. Serve immediately or cover and refrigerate for 30 minutes to let flavors meld.

Notes

Rinse canned beans and corn thoroughly to reduce sodium and canned taste. Do not over-mash avocado to keep some texture. Remove seeds from tomatoes if very juicy to avoid watery dip. Can be chilled for 30 minutes to meld flavors or served immediately. Store covered in fridge up to 2 days; stir before serving to refresh.
