  • 3 medium ripe peaches, sliced thinly
  • 8 ounces creamy buffalo mozzarella, torn or sliced
  • A handful (about 15-20) fresh basil leaves, whole or roughly torn
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze or reduction
  • Sea salt to taste
  • Freshly ground black pepper to taste
  • Optional: 2 tablespoons toasted pine nuts or slivered almonds

Instructions

  1. Wash and dry peaches. Slice thinly about 1/4 inch thick (6 mm).
  2. Tear or slice buffalo mozzarella into pieces roughly the same size as peach slices.
  3. On a large serving platter, alternate peach slices and mozzarella pieces, slightly overlapping them in a circular or linear pattern. Tuck fresh basil leaves between layers.
  4. Drizzle extra virgin olive oil evenly over the salad, followed by a light drizzle of balsamic glaze. Sprinkle with sea salt flakes and freshly ground black pepper. Scatter toasted pine nuts or slivered almonds if using.
  5. Cover loosely with plastic wrap and refrigerate for at least 30 minutes to chill and meld flavors.
  6. Remove from fridge about 5 minutes before serving to take the chill off slightly.
