  • 1/2 cup shredded coconut (unsweetened)
  • 1/4 cup pure honey (or maple syrup for vegan option)
  • 1/4 cup melted coconut oil
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup dried fruit (optional: raisins, cranberries, or chopped dates—add after baking)
  • 4 cups Greek yogurt (plain or vanilla; or dairy-free coconut yogurt)
  • 3 cups fresh berries (strawberries, blueberries, raspberries)
  • 1 cup sliced bananas (optional)
  • 1/2 cup chia seeds (optional)
  • 1/2 cup mini chocolate chips or cacao nibs (optional)
  • 1/2 cup toasted pumpkin seeds or sunflower seeds (optional)
  • Honey or maple syrup (for drizzling on top)

Instructions

  1. Preheat oven to 325°F (163°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine rolled oats, chopped nuts, shredded coconut, cinnamon, and salt. Stir until well distributed.
  3. In a separate bowl, whisk together honey (or maple syrup) and melted coconut oil.
  4. Pour wet ingredients over dry and toss until all oats are coated.
  5. Spread mixture evenly on lined baking sheet. Bake for 18-22 minutes, stirring halfway through. Granola should be golden brown and fragrant.
  6. Remove from oven and let cool. Add dried fruit (if using) once granola is cool.
  7. Wash and dry fresh berries. Hull and slice strawberries, halve large blueberries, and leave raspberries whole.
  8. Slice bananas and arrange with berries in small bowls.
  9. Scoop Greek yogurt into a large bowl or divide among serving jars.
  10. Set out chia seeds, mini chocolate chips, pumpkin seeds, and honey/maple syrup in smaller dishes.
  11. Set up a serving area with bowls of granola, yogurt, berries, and toppings. Let guests build their own parfaits.
  12. Layer yogurt, berries, and granola for classic parfait style, or let everyone create their own combos.
  13. Top with a drizzle of honey and sprinkle of seeds or chocolate chips.
  14. Serve immediately for best crunch and freshness.
