Instructions

  1. In a large bowl, whisk together flour, baking powder, salt, and sugar. Set aside.
  2. In a medium bowl, whisk milk, egg, melted butter, and vanilla extract until smooth.
  3. Stir in softened mascarpone cheese into the wet mixture until fully combined and creamy.
  4. Pour wet ingredients into dry ingredients and gently fold with a spatula until just combined; batter should be slightly lumpy.
  5. Preheat skillet or griddle over medium heat and lightly grease with butter or oil.
  6. Pour ¼ cup batter onto skillet for each pancake. Cook until bubbles form on surface and edges look set, about 2-3 minutes.
  7. Flip pancakes carefully and cook the other side for 1-2 minutes until golden brown.
