  • 12 tablespoons honey, maple syrup, or sugar (optional)

Instructions

  1. Separate the 4 large eggs into two bowls, keeping yolks in a large mixing bowl and whites in a clean, dry bowl.
  2. To the egg yolks, add 1 cup (225g) small-curd cottage cheese, 1 teaspoon vanilla extract, and your chosen sweetener (1-2 tablespoons). Mix gently until smooth but do not overwork.
  3. Sift ½ cup (65g) all-purpose flour with 1 teaspoon baking powder and a pinch of salt in a separate bowl.
  4. Gradually fold the dry ingredients into the wet mixture using a spatula, combining gently without deflating the batter.
  5. Beat the egg whites using an electric mixer or whisk until stiff peaks form.
  6. Carefully fold the beaten egg whites into the batter in three parts, using a gentle folding motion to keep the air in.
  7. Preheat a non-stick skillet or griddle over medium heat and add a small knob of butter or a light coating of oil.
  8. Pour ¼ cup (60 ml) batter onto the skillet. Cook for 2-3 minutes until bubbles form on the surface and edges look set.
  9. Flip gently and cook the other side for 1-2 minutes until golden. Keep heat medium-low to avoid burning.
  10. Serve warm with your favorite toppings such as fresh fruit, nuts, or syrup.
