  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Rinse banana peppers under cold water and slice into thin rings about 1/4-inch thick. Remove seeds if less heat is desired.
  2. Peel and gently crush garlic cloves with the flat side of a knife to release flavor without bitterness.
  3. In a medium saucepan, combine white vinegar, water, sugar, kosher salt, Italian seasoning, and optional red pepper flakes. Bring to a gentle boil over medium heat, stirring occasionally until sugar and salt dissolve, about 5 minutes.
  4. Place sliced banana peppers and crushed garlic evenly into two sterilized quart jars, leaving about 1/2 inch headspace.
  5. Pour the hot brine into the jars, covering the peppers completely. Tap jars gently to release air bubbles, wipe rims clean, and seal tightly with lids.
  6. Let jars cool to room temperature (30-45 minutes), then refrigerate for at least 3 days before tasting to allow flavors to develop.
