A fresh and vibrant peach salsa combining juicy peaches, spicy jalapeños, and bright cilantro for a perfect balance of sweet and heat. Ideal as a dip or topping for grilled meats, tacos, and chips.

  • 3 medium ripe peaches, peeled and finely diced
  • 1 medium jalapeño pepper, seeded and finely chopped (adjust seeds for heat)
  • ½ cup chopped fresh cilantro leaves
  • ¼ cup finely diced red onion
  • Juice of 1 lime (about 2 tablespoons)
  • 1 tablespoon honey or agave nectar (optional)
  • ½ teaspoon kosher salt
  • Freshly ground black pepper, to taste

Instructions

  1. Peel the peaches by blanching them in boiling water for 30 seconds, then plunging into ice water to loosen the skins, or peel with a sharp knife. Dice the peeled peaches into small, even pieces (about ¼ inch cubes).
  2. Cut the stem off the jalapeño, slice it in half lengthwise, and remove seeds if less heat is desired. Finely dice the jalapeño.
  3. Peel and finely chop the red onion into small pieces.
  4. Rinse fresh cilantro, pat dry, and roughly chop the leaves, avoiding woody stems.
  5. In a medium bowl, gently toss together diced peaches, jalapeño, red onion, and chopped cilantro.
  6. Add lime juice, salt, freshly ground black pepper, and honey or agave nectar if using. Stir gently to combine.
  7. Let the salsa sit at room temperature for at least 15 minutes to allow flavors to meld. Drain excess juice if salsa is too watery before serving.

Notes

Use ripe but firm peaches to avoid soggy salsa. Adjust jalapeño seeds to control heat. Let salsa rest to meld flavors and soften onions. Drain excess juice if watery. Can be made ahead and refrigerated; bring to room temperature before serving.
