Ingredients

  • All-purpose flour – 1 ½ cups (190g), sifted for lightness
  • Baking powder – 1 ½ teaspoons
  • Salt – ¼ teaspoon
  • Unsalted butter – ½ cup (115g), softened
  • Granulated sugar – ¾ cup (150g)
  • Large eggs – 2, room temperature
  • Whole milk – ½ cup (120ml)
  • Pure vanilla extract – 1 teaspoon
  • Food coloring gel – assorted colors
  • For the Creamy Swirl Frosting:
  • Unsalted butter – 1 cup (230g), softened
  • Powdered sugar – 3 cups (360g), sifted
  • Heavy cream – 2-3 tablespoons
  • Pure vanilla extract – 1 teaspoon
  • A pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners. Have all ingredients at room temperature.
  2. In a medium bowl, whisk together sifted flour, baking powder, and salt. Set aside.
  3. Using an electric mixer, beat softened butter and granulated sugar on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, scraping down the bowl between additions. Mix in vanilla extract.
  5. Reduce mixer speed to low. Add dry ingredients in three parts, alternating with milk, beginning and ending with dry ingredients. Mix just until combined.
  6. Divide batter evenly into 5 small bowls. Add different gel food colors to each and stir gently.
  7. Spoon dollops of each colored batter into cupcake liners in layers or random splotches. Swirl gently with a toothpick or skewer to create tie-dye pattern.
  8. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool in pan 5 minutes, then transfer to wire rack.
  9. For frosting, beat softened butter on medium speed until creamy. Gradually add powdered sugar on low speed. Add heavy cream, vanilla extract, and salt. Beat on high for 3-4 minutes until fluffy.
  10. Divide frosting in half, tint one half if desired. Spoon both into a piping bag side-by-side and pipe swirls onto cooled cupcakes.

Notes

Use gel food coloring for vibrant colors without thinning batter. Avoid overmixing batter to keep cupcakes tender. Chill frosting if too soft to pipe; add cream if too stiff. Room temperature ingredients blend better. Test oven temperature and start checking cupcakes at 18 minutes.
