  • 1/4 cup honey (85 grams)
  • 4 cloves garlic, minced
  • 2 tablespoons chopped fresh thyme
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons unsalted butter, softened (30 grams)
  • 1 tablespoon olive oil (15 ml)
  • 1 tablespoon apple cider vinegar (15 ml)
  • Salt and pepper to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper. Let them sit at room temperature for 10 minutes.
  2. In a small bowl, mix honey, minced garlic, softened butter, apple cider vinegar, chopped thyme, and parsley until combined.
  3. Heat a skillet over medium heat and add olive oil. When the oil shimmers, add chicken breasts skin side down. Cook undisturbed for 6-7 minutes until golden brown and crispy.
  4. Flip the chicken and cook the other side for 5 minutes.
  5. Reduce heat to low. Pour the honey garlic glaze over the chicken and baste continuously for 5-7 minutes until the glaze thickens and coats the chicken.
  6. Check for doneness with a meat thermometer (165°F / 74°C) or cut a small slit to ensure juices run clear and meat is no longer pink.
  7. Transfer chicken to a plate and let rest for 5 minutes before serving.

Use bone-in chicken breasts for juicier meat; reduce cooking time if using boneless. For dairy-free, substitute butter with coconut or avocado oil. Avoid high heat to prevent honey from burning. Rest chicken before serving to retain juices. Baste glaze gently and patiently.
